In 1957, Madalene and Jim Hill moved to a plot of land in the Sam Houston National Forest near Cleveland, Texas, planning to retire and grow a few herbs. That retirement project over 30 years ago took a course that has had a profound impact on thousands of people whose lives have touched the Hills. Their work grew into a full-fledged career for both Jim and Madalene and eventually their daughter, Gwen. It became a thriving business employing some 25 staff members who tended gardens, harvested herbs, created herbal products of all kinds, packed and mailed goods for mail-order customers, and cooked delicious foods served in a greenhouse boasting a burgeoning collection of plants from around the world. Truly new, truly original, the Hilltop Herb Farm Restaurant was like nothing else in almost anyones experience, certainly not in the Houston area. The hour-plus drive to Hilltop for a succulent, multi-course luncheon or dinner became a ritual excursion for people of every social stripe. In 1987, Chain-O-Lakes Resort & Conference Center purchased Hilltop Herb Farm Restaurant , along with its herbs and famous recipes. Dr. James D. Smith, owner of Chain-O-Lakes (The Retreat at Artesian Lakes), relocated the entire establishment to the Resort. Hilltop continues to offer gourmet, herb-flavored meals and a fine assortment of jams, jellies and cooking condiments to both resort and conference center guests and area residents. The main dining room offers a breathtaking view of an Artesian fed lake and the woods beyond. The Hilltop complex features two meeting rooms, a private dining room and an outdoor terrace. The herb gardenlocated only steps away from the main entrance continues to thrive and supply the kitchen. Several packages combining guided tours of the herb garden, sampling of the various specialty products and a restaurant meal are available for groups with advanced reservations. A cookbook and cooking classes are currently in the works. |
